Description

A delicious and hearty meal combining chicken, rice, and spices in a slow cooker for a comforting burrito bowl.


Ingredients

  • 1 1/2 lbs boneless, skinless chicken breasts
  • 1 cup long-grain white rice (uncooked)
  • 2 cups chicken broth
  • 1 cup salsa (mild or medium)
  • 1 can black beans (drained and rinsed)
  • 1 cup corn (frozen or canned)
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Toppings: diced avocado, sour cream, cilantro, and lime wedges


Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Add the uncooked rice, chicken broth, salsa, black beans, corn, chili powder, cumin, salt, and pepper.
  3. Stir the ingredients to combine.
  4. Cover and cook on low for 240-300 minutes or until the chicken is cooked through and easily shredded.
  5. Before serving, stir in the cheese until melted.
  6. Serve warm, topped with avocado, sour cream, cilantro, and a squeeze of lime.
