Ingredients
- 1 1/2 lbs boneless, skinless chicken breasts
- 1 cup long-grain white rice (uncooked)
- 2 cups chicken broth
- 1 cup salsa (mild or medium)
- 1 can black beans (drained and rinsed)
- 1 cup corn (frozen or canned)
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Toppings: diced avocado, sour cream, cilantro, and lime wedges
Instructions
- Place the chicken breasts in the slow cooker.
- Add the uncooked rice, chicken broth, salsa, black beans, corn, chili powder, cumin, salt, and pepper.
- Stir the ingredients to combine.
- Cover and cook on low for 240-300 minutes or until the chicken is cooked through and easily shredded.
- Before serving, stir in the cheese until melted.
- Serve warm, topped with avocado, sour cream, cilantro, and a squeeze of lime.
