Description
A comforting and traditional dish made with tender black-eyed peas and smoky ham, perfect for celebrations or any day of the year.
Ingredients
- 1 pound dried black-eyed peas
- 6 cups water or broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 smoked ham hock or 2 cups diced ham
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon thyme (optional)
- 1 bay leaf (optional)
Instructions
- Rinse and soak the black-eyed peas overnight, or use the quick soak method by boiling them for 5 minutes and then letting them sit for 1 hour.
- Drain the peas and place them in the crock pot.
- Add water or broth, chopped onion, minced garlic, ham hock or diced ham, salt, pepper, thyme, and bay leaf.
- Stir to combine all the ingredients.
- Cover and cook on low for 360–480 minutes or on high for 240–300 minutes, until the peas are tender.
- Remove the ham hock, shred any meat, and stir it back into the peas.
- Serve warm as a main dish or side.
Notes
For the best texture, don’t skip the soaking step. Adjust the salt according to your broth’s saltiness. Consider using smoked turkey for a healthier option.
