Ingredients

  • 2 medium zucchinis, grated
  • 2 large eggs
  • 1/4 cup oat flour (or almond flour for a low-carb option)
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/4 cup plain Greek yogurt or cottage cheese
  • 1 garlic clove, finely minced
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried oregano or thyme
  • 2 tbsp chopped fresh parsley or dill
  • 1 tbsp olive oil or olive oil spray for pan-frying


Instructions

  1. Grate zucchini and let it sit to release excess water.
  2. Squeeze the shredded zucchini thoroughly to remove moisture.
  3. In a bowl, combine grated zucchini with eggs, flour, cheese, yogurt, garlic, and spices until a batter forms.
  4. Heat a non-stick skillet with a bit of oil over medium heat.
  5. Scoop 1/4 cup of batter into the skillet, flattening it gently.
  6. Cook for 3-4 minutes on each side until golden and cooked through.
  7. Drain on paper towels and serve warm.

Notes
