Description

Simple, comforting snacks made from potatoes, perfect for any occasion.


Ingredients

  • 4 large Potatoes (Russets or Yukon Gold)
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • Fresh herbs (like parsley or chives)
  • Sriracha to taste
  • 1/4 cup Vegan mayo


Instructions

  1. Boil the potatoes until tender, then drain and let cool slightly.
  2. In a mixing bowl, mash the potatoes, then add olive oil, garlic powder, onion powder, paprika, salt, pepper, and chopped fresh herbs. Mix until combined.
  3. Shape the mixture into small balls.
  4. Preheat the oven to 400°F (200°C).
  5. Place the balls on a baking sheet lined with parchment paper and bake for 25-30 minutes or until golden brown and crispy.
  6. For the Sriracha mayo, mix vegan mayo with Sriracha to taste.
  7. Serve the potato balls warm with the Sriracha mayo for dipping.

Notes

For a crispier exterior, roll each ball in cornstarch or fine breadcrumbs before baking.
