Description

Delicious and juicy oven-baked chicken thighs with a crispy skin and flavorful seasoning, perfect for family dinners or meal prep.

Ingredients

  • 8 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • Optional: fresh parsley, chopped for garnish

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with aluminum foil or parchment paper for easy cleanup.
  2. Pat the chicken thighs dry with paper towels and place them on the prepared baking sheet.
  3. In a small bowl, mix together the olive oil, salt, black pepper, garlic powder, onion powder, smoked paprika, thyme, and oregano to create a seasoning blend.
  4. Brush or drizzle the olive oil over the chicken thighs.
  5. Sprinkle the seasoning blend over each thigh, coating evenly.
  6. Bake for 35-45 minutes, until the internal temperature reaches 165°F (74°C) and the skin is crispy.
  7. Remove from the oven and let rest for 5 minutes before serving. Garnish with parsley if desired.

Notes

For best results, pat the chicken dry before seasoning to ensure a crispy skin. Adjust spices according to taste and consider using a meat thermometer for doneness.
