Description

A delightful twist on the classic baked potato, Hasselback potatoes feature a crispy exterior and fluffy interior, infused with deep flavors.


Ingredients

  • 2 russet potatoes (medium, about 6″ in length)
  • 1 tbsp bacon fat or olive oil
  • 1/2 tsp kosher salt
  • 2 tbsp herbs of choice (such as thyme or parsley)
  • 2 tbsp melted butter or olive oil to baste


Instructions

  1. Preheat the oven to 425°F.
  2. Line a baking sheet with aluminum foil, parchment paper, or a silicone mat.
  3. Rub the potatoes with bacon fat or olive oil and sprinkle with kosher salt.
  4. Slice a thin portion from one side of the potato and set aside.
  5. Place the potato on the flat cut side and use chopsticks or wooden spoons on either side to guide your slicing.
  6. Make 1/8″ thick slices, cutting down to the chopstick or spoon to keep slices from going all the way through.
  7. Place the potato cut-side down on the lined baking tray.
  8. Mince your herbs and add them to the melted butter or olive oil, along with any extra seasonings you desire.
  9. Brush the potato with the herbed butter or olive oil, ensuring flavor gets into the slices.
  10. Bake for 30 minutes, then baste with more seasoned butter or olive oil and continue baking for an additional 20 minutes until crispy and golden brown.
  11. Top with any leftover butter and fresh herbs before serving.
