Crispy Ground Beef Tacos

Description

Simple and delicious ground beef tacos with a crispy shell, perfect for weeknight dinners or gatherings.


Ingredients

  • 1 pound lean ground beef (90%)
  • 1 packet of taco seasoning
  • 3/4 cup red enchilada sauce
  • 2 1/2 cups Oaxaca cheese or Mexican cheese or Monterey Jack
  • 10 corn tortillas
  • 1 tablespoon olive oil


Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Heat a skillet over medium-high heat. Add the ground beef and cook it while breaking it up with a spatula.
  3. Stir in the taco seasoning and enchilada sauce. Let it simmer for a few minutes, then remove it from the heat.
  4. Wrap the tortillas in a damp paper towel and microwave for 30–60 seconds until they are soft.
  5. Brush one side of each tortilla with olive oil. Place the tortillas on a baking sheet with the oiled side down.
  6. On one half of each tortilla, add 2 tablespoons of cheese. Top with ¼ cup of the beef mixture, then sprinkle 2 more tablespoons of cheese on top. Fold the tortilla over the filling.
  7. Repeat these steps with the remaining tortillas, arranging them in a single layer on the baking sheet.
  8. Bake in the preheated oven for 16 minutes, or until the tortillas are crispy and the cheese is melted. Let the tacos cool for 3 minutes before serving.

Notes

For extra crunch, try baking the tacos a bit longer, but make sure to keep an eye on them to prevent burning. Use a non-stick spray on the baking sheet if you don’t have olive oil.
