Description
Simple and delicious ground beef tacos with a crispy shell, perfect for weeknight dinners or gatherings.
Ingredients
- 1 pound lean ground beef (90%)
- 1 packet of taco seasoning
- 3/4 cup red enchilada sauce
- 2 1/2 cups Oaxaca cheese or Mexican cheese or Monterey Jack
- 10 corn tortillas
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 450°F (232°C).
- Heat a skillet over medium-high heat. Add the ground beef and cook it while breaking it up with a spatula.
- Stir in the taco seasoning and enchilada sauce. Let it simmer for a few minutes, then remove it from the heat.
- Wrap the tortillas in a damp paper towel and microwave for 30–60 seconds until they are soft.
- Brush one side of each tortilla with olive oil. Place the tortillas on a baking sheet with the oiled side down.
- On one half of each tortilla, add 2 tablespoons of cheese. Top with ¼ cup of the beef mixture, then sprinkle 2 more tablespoons of cheese on top. Fold the tortilla over the filling.
- Repeat these steps with the remaining tortillas, arranging them in a single layer on the baking sheet.
- Bake in the preheated oven for 16 minutes, or until the tortillas are crispy and the cheese is melted. Let the tacos cool for 3 minutes before serving.
Notes
For extra crunch, try baking the tacos a bit longer, but make sure to keep an eye on them to prevent burning. Use a non-stick spray on the baking sheet if you don’t have olive oil.
