Description

Light, airy focaccia topped with garlic, Parmesan, and herbs baked golden brown for the perfect side or snack.


Ingredients

2 cups bread flour (or all-purpose)

1 teaspoon kosher salt

1 cup warm water

1⅛ teaspoons instant yeast

½ teaspoon granulated sugar

Olive oil (for pan and topping)

3 cloves garlic, minced

⅔ cup freshly grated Parmesan cheese

1½ teaspoons dried Italian seasoning

Maldon flaked sea salt, for finishing


Instructions

1. In a large bowl, whisk together flour and kosher salt.

2. In a measuring cup, mix warm water, yeast, and sugar. Let sit 3–5 minutes until foamy.

3. Stir the yeast mixture into the flour with a wooden spoon until just combined.

4. Cover tightly with plastic wrap and refrigerate for 8 hours or overnight.

5. Drizzle olive oil into an 8‑inch round cake pan and place dough in the center, tucking ends underneath.

6. Cover with plastic wrap and let rise for 2 hours at room temperature.

7. Preheat oven to 450°F. Remove plastic, drizzle more olive oil, and dimple the dough.

8. Mix garlic, Parmesan, and Italian seasoning. Sprinkle over dough with flaked sea salt.

9. Reduce oven to 425°F and bake for 22–24 minutes until golden brown.

Notes

Make-ahead: Dough can rest in the fridge overnight.

To freeze: Wrap cooled bread tightly and freeze for up to 3 months.

Storage: Keeps at room temperature, covered, for 2–4 days.
