Description
A nutritious salad combining protein-rich tuna and crispy chickpeas with fresh vegetables for a light yet hearty meal.
Ingredients
- 2 cups Butterhead Lettuce
- 1 (5oz) can Wild Planet Albacore Wild Tuna
- 1/2 an Avocado
- 1/2 cup Grape Tomatoes
- 2 Tbsp Kalamata Olives
- Lemon juice to taste
- Drizzle of Olive Oil
- Salt & black pepper, to taste
- ⅓ cup canned Chickpeas
- 1/2 tsp Smoked Paprika
- 1/2 tsp Garlic Powder
- Pinch of Black Pepper
- Pinch of Pink Salt
Instructions
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- Rinse and drain ⅓ cup of canned chickpeas.
- Toss the chickpeas in a bowl with smoked paprika, garlic powder, black pepper, and pink salt until well-coated.
- Spread the seasoned chickpeas on the prepared baking sheet and bake for 15 minutes or until crispy.
- While the chickpeas are baking, fill a bowl with butterhead lettuce as the base.
- Top the lettuce with the crispy chickpeas, sliced grape tomatoes, Wild Albacore Tuna, sliced avocado, and kalamata olives.
- Squeeze fresh lemon juice over the top and drizzle with olive oil.
- Finish with salt and black pepper to taste. Enjoy!
Notes
Ensure chickpeas are dry before seasoning for extra crunch. Customize with your favorite vegetables.
