Description

A nutritious salad combining protein-rich tuna and crispy chickpeas with fresh vegetables for a light yet hearty meal.


Ingredients

  • 2 cups Butterhead Lettuce
  • 1 (5oz) can Wild Planet Albacore Wild Tuna
  • 1/2 an Avocado
  • 1/2 cup Grape Tomatoes
  • 2 Tbsp Kalamata Olives
  • Lemon juice to taste
  • Drizzle of Olive Oil
  • Salt & black pepper, to taste
  • ⅓ cup canned Chickpeas
  • 1/2 tsp Smoked Paprika
  • 1/2 tsp Garlic Powder
  • Pinch of Black Pepper
  • Pinch of Pink Salt


Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. Rinse and drain ⅓ cup of canned chickpeas.
  3. Toss the chickpeas in a bowl with smoked paprika, garlic powder, black pepper, and pink salt until well-coated.
  4. Spread the seasoned chickpeas on the prepared baking sheet and bake for 15 minutes or until crispy.
  5. While the chickpeas are baking, fill a bowl with butterhead lettuce as the base.
  6. Top the lettuce with the crispy chickpeas, sliced grape tomatoes, Wild Albacore Tuna, sliced avocado, and kalamata olives.
  7. Squeeze fresh lemon juice over the top and drizzle with olive oil.
  8. Finish with salt and black pepper to taste. Enjoy!

Notes

Ensure chickpeas are dry before seasoning for extra crunch. Customize with your favorite vegetables.
