Description

Crispy and healthier cauliflower hash browns, perfect for breakfast, brunch, or a snack.


Ingredients

  • 12 ounces riced cauliflower (1.5 cups)
  • 1/2 small onion (grated)
  • 1 cup shredded cheddar cheese
  • 2 eggs
  • 1/2 teaspoon garlic powder
  • Salt and pepper (to taste)
  • 2 tablespoons olive oil


Instructions

  1. In a medium bowl, combine the riced cauliflower, grated onion, shredded cheddar cheese, eggs, garlic powder, salt, and pepper. Mix well until all ingredients are evenly incorporated.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Take about 3 tablespoons of the hash brown mixture and press it into a circular shape with your hands.
  4. Carefully place the formed hash browns into the skillet, making sure not to overcrowd the pan. Cook for about 2-3 minutes on one side or until they are golden brown.
  5. Flip them carefully and cook for an additional 2-3 minutes until both sides are beautifully browned and crispy.
  6. Repeat the process with the remaining mixture until all the hash browns are cooked.

Notes

Draining excess moisture from the riced cauliflower helps achieve a crispier texture. For variations, try different cheeses or add spices.
