Description
Crispy and healthier cauliflower hash browns, perfect for breakfast, brunch, or a snack.
Ingredients
- 12 ounces riced cauliflower (1.5 cups)
- 1/2 small onion (grated)
- 1 cup shredded cheddar cheese
- 2 eggs
- 1/2 teaspoon garlic powder
- Salt and pepper (to taste)
- 2 tablespoons olive oil
Instructions
- In a medium bowl, combine the riced cauliflower, grated onion, shredded cheddar cheese, eggs, garlic powder, salt, and pepper. Mix well until all ingredients are evenly incorporated.
- In a large skillet, heat the olive oil over medium heat.
- Take about 3 tablespoons of the hash brown mixture and press it into a circular shape with your hands.
- Carefully place the formed hash browns into the skillet, making sure not to overcrowd the pan. Cook for about 2-3 minutes on one side or until they are golden brown.
- Flip them carefully and cook for an additional 2-3 minutes until both sides are beautifully browned and crispy.
- Repeat the process with the remaining mixture until all the hash browns are cooked.
Notes
Draining excess moisture from the riced cauliflower helps achieve a crispier texture. For variations, try different cheeses or add spices.
