Ingredients

  • 2 lb carrots
  • 2 tablespoons cornstarch
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 tablespoons avocado oil
  • Finely minced parsley (to serve)


Instructions

  1. Preheat your oven to 425°F and line two 13×18 inch baking sheets with parchment paper.
  2. Cut the carrots into thin sticks for uniform cooking.
  3. In a large bowl, toss the carrot fries with cornstarch to coat.
  4. Add garlic powder, onion powder, Italian seasoning, salt, and pepper; toss again to mix.
