Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup vanilla pastry cream
- 1/2 cup granulated sugar (for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the vanilla pastry cream until evenly distributed.
- Drop spoonfuls of dough onto parchment-lined baking sheets.
- Bake for 10-12 minutes or until the edges are golden.
- Allow the cookies to cool slightly, then sprinkle a thin layer of granulated sugar on top of each cookie.
- Use a kitchen torch to caramelize the sugar until golden and crisp.
- Let the cookies cool before serving.
Notes
