A comforting dish perfect for any time of year, combining tender chicken and creamy broth with an array of flavors.
Ingredients
- 2 cups cooked chicken, shredded
- 1 can white beans, drained and rinsed
- 1 can corn, drained
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Optional toppings: cilantro, sour cream, lime, jalapeños
Instructions
- In a large pot, sauté the onion and garlic until soft.
- Add the shredded chicken, white beans, corn, chicken broth, cumin, chili powder, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for 20 minutes.
- Stir in heavy cream and heat through.
- Serve hot with your choice of optional toppings.
Notes
For a thicker chili, add more heavy cream or reduce the broth. Use rotisserie chicken to save time.
