Ingredients
- 2 cups mixed vegetables (carrots, celery, bell peppers, etc.)
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 cup shredded cheese (cheddar or your choice)
- Salt and pepper to taste
- Olive oil for cooking
- Optional: herbs (thyme, parsley) for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the onion and garlic, sautéing until soft.
- Add the mixed vegetables and cook for a few minutes.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and simmer for about 15 minutes until vegetables are tender.
- Stir in the heavy cream and cheese, mixing until the cheese is melted and the soup is creamy.
- Season with salt and pepper.
- Serve hot, garnished with herbs if desired.
Notes
For a thicker soup, blend a portion of the soup and mix it back in. Use seasonal vegetables for the best taste.
