Description

Ingredients

  • 2 cups mixed vegetables (carrots, celery, bell peppers, etc.)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Olive oil for cooking
  • Optional: herbs (thyme, parsley) for garnish


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the onion and garlic, sautéing until soft.
  3. Add the mixed vegetables and cook for a few minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and simmer for about 15 minutes until vegetables are tender.
  6. Stir in the heavy cream and cheese, mixing until the cheese is melted and the soup is creamy.
  7. Season with salt and pepper.
  8. Serve hot, garnished with herbs if desired.

Notes

For a thicker soup, blend a portion of the soup and mix it back in. Use seasonal vegetables for the best taste.
