Description

A simple, comforting pasta dish that balances bright tomato flavor with silky cream and fragrant garlic, perfect for busy weeknights.


Ingredients

  • 8 oz spaghetti or fettuccine
  • 1 cup ripe tomatoes (diced)
  • 1 cup heavy cream
  • 4 cloves fresh garlic (minced)
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh basil (chopped)
  • Salt and pepper to taste


Instructions

  1. Boil a large pot of salted water and cook the pasta according to package instructions until al dente. Reserve about 1/2 cup of pasta water, then drain and set aside.
  2. In a large skillet over medium heat, warm the olive oil. Add the minced garlic and sauté until golden and fragrant, about 30–60 seconds.
  3. Add the diced tomatoes to the skillet, season with salt and pepper, and let simmer for about 5 minutes.
  4. Lower the heat and stir in the heavy cream until the sauce is smooth. Simmer gently for another 1–2 minutes.
  5. Add the cooked pasta to the skillet and toss thoroughly to coat. Adjust consistency with reserved pasta water if needed.
  6. Serve immediately, topped with fresh basil and optional Parmesan cheese.

Notes

For lighter options, substitute half-and-half or use dairy-free alternatives for the cream. Fresh basil should be added just before serving for maximum flavor.
