Ingredients
- 6 bone-in skinless chicken thighs
- 2 tbsp olive oil
- 3 tbsp unsalted butter
- 4 garlic cloves (minced)
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup grated Parmesan cheese
- 1 tsp paprika
- 1 tsp dried Italian herbs (oregano/thyme)
- ½ tsp salt (adjust to taste)
- ½ tsp black pepper
- 2 tbsp fresh parsley or dill (chopped)
Instructions
- Preheat the oven to 375°F (190°C).
- Pat the chicken thighs dry and season with paprika, salt, and pepper.
- In an oven-safe skillet, heat olive oil and 1 tablespoon of butter over medium-high heat.
- Sear chicken thighs for 3–4 minutes on each side until golden brown. Remove and set aside.
- In the same skillet, melt the remaining butter and add minced garlic. Cook for 1 minute until fragrant.
- Stir in heavy cream, chicken broth, Parmesan cheese, and Italian herbs. Simmer for 2–3 minutes.
- Return the chicken to the skillet, spooning the sauce over the top.
- Transfer the skillet to the oven and bake uncovered for 25–30 minutes or until chicken reaches 165°F (74°C).
- Garnish with fresh parsley or dill before serving.
Notes
For extra flavor, marinate the chicken in spices and a bit of cream before cooking. For heat, add red pepper flakes to the sauce. You can also add vegetables like spinach or mushrooms to the sauce.
