Description

A simple yet delicious one-pot meal featuring creamy penne pasta, fresh spinach, and tomatoes – perfect for weeknight dinners.


Ingredients

  • 12 ounces penne pasta
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 4 cups vegetable broth
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant.
  2. Add the penne pasta, diced tomatoes (with juice), and vegetable broth. Stir to combine.
  3. Bring to a boil, then reduce heat to a simmer. Cover and cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente.
  4. Stir in the fresh spinach and Italian seasoning. Cook until the spinach wilts.
  5. Remove from heat and stir in the heavy cream and grated Parmesan cheese.
  6. Season with salt and pepper to taste.
  7. Serve warm, garnished with fresh basil.

Notes

Add more vegetables like bell peppers or mushrooms for extra flavor. For a spicy kick, sprinkle some red pepper flakes in with the spinach.
