A simple yet delicious one-pot meal featuring creamy penne pasta, fresh spinach, and tomatoes – perfect for weeknight dinners.
Ingredients
- 12 ounces penne pasta
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes, undrained
- 4 cups vegetable broth
- 2 cups fresh spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant.
- Add the penne pasta, diced tomatoes (with juice), and vegetable broth. Stir to combine.
- Bring to a boil, then reduce heat to a simmer. Cover and cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente.
- Stir in the fresh spinach and Italian seasoning. Cook until the spinach wilts.
- Remove from heat and stir in the heavy cream and grated Parmesan cheese.
- Season with salt and pepper to taste.
- Serve warm, garnished with fresh basil.
Notes
Add more vegetables like bell peppers or mushrooms for extra flavor. For a spicy kick, sprinkle some red pepper flakes in with the spinach.
