Description

A hearty and creamy casserole that’s low in carbs, perfect for families and meal prep.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cauliflower florets
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup chicken broth
  • 1/2 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup chopped green onions (for garnish)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, cauliflower florets, cream cheese, cheddar cheese, chicken broth, sour cream, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Pour the mixture into a greased baking dish and spread it evenly.
  4. Bake for 25-30 minutes or until the casserole is bubbly and golden on top.
  5. Remove from the oven and let it cool for a few minutes before serving. Garnish with chopped green onions and enjoy!

Notes

Use rotisserie chicken for added flavor. Can be made vegetarian by substituting chicken with mushrooms or more cauliflower.
