Description
A comforting and hearty soup made with potatoes, fresh herbs, and cream, perfect for chilly days.
Ingredients
- 2 pounds potatoes, peeled and diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream or milk
- 2 tablespoons fresh herbs (such as thyme, rosemary, or parsley)
- Salt and pepper to taste
- Olive oil or butter for sautéing
Instructions
- In a large pot, heat olive oil or butter over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
- Add minced garlic and sauté for an additional minute.
- Stir in diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Use an immersion blender to blend the soup until smooth (or transfer to a blender in batches).
- Stir in heavy cream and fresh herbs. Season with salt and pepper to taste.
- Serve warm, garnished with additional herbs if desired.
Notes
For a thicker soup, add more potato. You can also adjust the amount of cream for desired richness.
