Description

A comforting and hearty soup made with potatoes, fresh herbs, and cream, perfect for chilly days.


Ingredients

  • 2 pounds potatoes, peeled and diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream or milk
  • 2 tablespoons fresh herbs (such as thyme, rosemary, or parsley)
  • Salt and pepper to taste
  • Olive oil or butter for sautéing


Instructions

  1. In a large pot, heat olive oil or butter over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and sauté for an additional minute.
  3. Stir in diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  4. Use an immersion blender to blend the soup until smooth (or transfer to a blender in batches).
  5. Stir in heavy cream and fresh herbs. Season with salt and pepper to taste.
  6. Serve warm, garnished with additional herbs if desired.

Notes

For a thicker soup, add more potato. You can also adjust the amount of cream for desired richness.
