Description

Tender and juicy chicken thighs enveloped in a luscious garlic cream sauce with sautéed mushrooms, perfect for family dinners.


Ingredients

  • 4 bone-in, skin-on chicken thighs
  • Salt and pepper, to taste
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 8 oz fresh cremini or button mushrooms, diced
  • 3 garlic cloves, minced
  • 1/2 cup chicken broth
  • 3/4 cup heavy cream
  • 2 tablespoons fresh parsley or thyme, chopped (plus extra for garnish)
  • Additional salt and pepper, to taste


Instructions

  1. Pat chicken thighs dry with paper towels and season generously with salt and pepper.
  2. Heat butter and olive oil in a large skillet over medium-high heat. Place chicken thighs skin-side down and sear for 5-7 minutes until crispy and golden.
  3. Flip the chicken thighs and cook the other side for 2-3 minutes, then remove chicken and set aside.
  4. In the same skillet, add diced mushrooms and minced garlic. Sauté for 4-5 minutes until mushrooms are browned and garlic is fragrant.
  5. Pour in chicken broth and scrape up any browned bits from the pan. Allow it to reduce slightly, then stir in heavy cream.
  6. Let the sauce simmer until thickened, then nestle chicken thighs back into the sauce.
  7. Reduce heat to low, cover, and cook for 10-12 minutes until chicken is cooked through.
  8. Sprinkle chopped parsley or thyme over the top before serving.

Notes

For a thicker sauce, let it simmer longer. You can also experiment with different mushrooms or herbs to suit your taste.
