Instructions
- In a large mixing bowl, beat softened cream cheese until smooth, or blend cottage cheese until creamy.
- Add the instant vanilla pudding mix along with the reserved pineapple juice, mixing until the mixture thickens.
- Gently fold in the well-drained crushed pineapple, leaving some small chunks for texture.
- Carefully fold in the Cool Whip to maintain its light, airy consistency.
- Stir in mini marshmallows, shredded coconut, and chopped nuts if using.
- Cover with plastic wrap and refrigerate for at least 2 hours or overnight.
- Before serving, gently fluff and garnish with whipped cream, cherries, or toasted coconut flakes.
