Description

A delightful dish combining tender chicken, rich cheese, and al dente pasta into a comforting meal perfect for family dinners or weeknight meals.


Ingredients

  • 3-4 boneless skinless chicken breasts (about 1 lb)
  • 8 oz elbow macaroni
  • 2 cups sharp cheddar cheese, shredded
  • 2 cups whole milk
  • 4 tbsp unsalted butter
  • ¼ cup all-purpose flour
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • ½ cup breadcrumbs (optional)


Instructions

  1. Boil a large pot of salted water and cook the elbow macaroni until al dente. Drain and set aside.
  2. In a skillet over medium heat, melt butter. Season cubed chicken with salt and pepper, add to skillet, and cook for 5-7 minutes until fully cooked.
  3. In the same skillet, add more butter if needed and sprinkle flour over melted butter to create a roux. Gradually add whole milk, stirring until sauce thickens (4-5 minutes).
  4. Lower heat and stir in shredded cheddar cheese until melted and smooth.
  5. Fold cooked pasta and sautéed chicken into the cheese sauce until well-coated.
  6. If desired, transfer to an oven-safe dish, sprinkle with breadcrumbs, and bake at 350°F for 20 minutes or until breadcrumbs are golden brown.
