Ingredients
- 3-4 boneless skinless chicken breasts (about 1 lb)
- 8 oz elbow macaroni
- 2 cups sharp cheddar cheese, shredded
- 2 cups whole milk
- 4 tbsp unsalted butter
- ¼ cup all-purpose flour
- 1 tsp garlic powder
- Salt and pepper to taste
- ½ cup breadcrumbs (optional)
Instructions
- Boil a large pot of salted water and cook the elbow macaroni until al dente. Drain and set aside.
- In a skillet over medium heat, melt butter. Season cubed chicken with salt and pepper, add to skillet, and cook for 5-7 minutes until fully cooked.
- In the same skillet, add more butter if needed and sprinkle flour over melted butter to create a roux. Gradually add whole milk, stirring until sauce thickens (4-5 minutes).
- Lower heat and stir in shredded cheddar cheese until melted and smooth.
- Fold cooked pasta and sautéed chicken into the cheese sauce until well-coated.
- If desired, transfer to an oven-safe dish, sprinkle with breadcrumbs, and bake at 350°F for 20 minutes or until breadcrumbs are golden brown.
