Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning
  • Salt and pepper, to taste
  • 12 oz penne, fettuccine, or spaghetti
  • Salt, for the pasta water
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ¼ cup grated Parmesan cheese
  • Fresh parsley, chopped (optional)
  • Red pepper flakes
  • Fresh lemon juice
  • Sautéed vegetables (optional)
  • Shrimp (optional)


Instructions

  1. Season chicken breasts with salt, pepper, and Cajun seasoning. Heat olive oil in a skillet over medium-high heat, then cook chicken for about 6-7 minutes per side until fully cooked. Remove and slice.
  2. In a pot, bring salted water to a boil, cook pasta according to package instructions, reserving some pasta water before draining.
  3. Melt butter in the same skillet, add minced garlic and sauté. Stir in Cajun seasoning and smoked paprika, then pour in heavy cream and chicken broth. Let simmer for about 5 minutes.
  4. Add cooked pasta to the skillet, toss with sauce and sliced chicken, adding Parmesan cheese. Adjust thickness with reserved pasta water and drizzle with lemon juice before serving.
