Description

A comforting dish blending sweet butternut squash with savory Italian sausage in a creamy sauce.


Ingredients

  • 1 lb butternut squash, peeled and cubed
  • 2 cups all-purpose flour
  • 1 egg
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup unsalted butter
  • 1 lb Italian sausage, casings removed
  • 1 onion, finely chopped
  • 1 tablespoon olive oil
  • 1/2 teaspoon red pepper flakes


Instructions

  1. Boil butternut squash until soft; drain and cool. Mash into a smooth puree and transfer to a mixing bowl.
  2. Add egg, flour, salt, and pepper to the puree; mix until a dough forms. Roll into ropes and cut into bite-sized pieces, creating ridges with a fork.
  3. Bring a large pot of salted water to a boil. Cook gnocchi until they float, then drain and set aside.
  4. Melt butter in a saucepan over medium heat. Add garlic and sauté until fragrant. Pour in heavy cream and simmer, stirring in Parmesan cheese until thickened. Season with salt and pepper.
  5. In a separate pan, warm olive oil. Add onion and cook until translucent. Add sausage, crumbling as it cooks, then add garlic and red pepper flakes; cook until browned.
  6. Toss cooked gnocchi with creamy sauce, then add sausage mixture and mix gently to coat.
  7. Serve warm, garnished with extra Parmesan cheese if desired.

Notes

Make the gnocchi ahead of time and refrigerate or freeze until ready to cook. Adjust red pepper flakes to control spice level.
