Creamy blueberry overnight oats blended into a delicious breakfast treat, perfect for busy mornings.
Ingredients
- 2 cups rolled oats (Approx. 240g)
- ½ cup milk of choice (Approx. 125ml)
- 1 cup frozen blueberries (Approx. 150g)
- 1 cup thick natural or Greek yogurt (Approx. 250g)
- 2 tsp vanilla extract (Approx. 8g)
- 1-2 tsp maple syrup (Optional; approx. 5–10g)
- ⅛ tsp salt (Approx. 0.25g)
- 1 cup blueberries (Fresh or frozen)
- 80 g dark chocolate (Melted and slightly cooled)
- ½ tbsp coconut oil (Optional; helps thin chocolate)
Instructions
- Add rolled oats, milk, frozen blueberries, yogurt, vanilla extract, maple syrup (if using), and salt to a high-speed blender.
- Blend on high until smooth and creamy, resembling a thick batter.
- Divide the fresh or frozen blueberries between 4 jars or containers.
- Pour the blended oat mixture over the blueberries and gently smooth the tops.
- If using, stir the melted chocolate and coconut oil together until combined, then pour over the top of each container.
- Seal and refrigerate for at least 90 minutes or overnight until chilled and set.
- Enjoy cold, straight from the fridge.
Notes
Allowing your oats to sit overnight gives them a creamier texture. For added variation, try experimenting with different fruits and toppings.
