Description

Creamy blueberry overnight oats blended into a delicious breakfast treat, perfect for busy mornings.


Ingredients

  • 2 cups rolled oats (Approx. 240g)
  • ½ cup milk of choice (Approx. 125ml)
  • 1 cup frozen blueberries (Approx. 150g)
  • 1 cup thick natural or Greek yogurt (Approx. 250g)
  • 2 tsp vanilla extract (Approx. 8g)
  • 1-2 tsp maple syrup (Optional; approx. 5–10g)
  • ⅛ tsp salt (Approx. 0.25g)
  • 1 cup blueberries (Fresh or frozen)
  • 80 g dark chocolate (Melted and slightly cooled)
  • ½ tbsp coconut oil (Optional; helps thin chocolate)


Instructions

  1. Add rolled oats, milk, frozen blueberries, yogurt, vanilla extract, maple syrup (if using), and salt to a high-speed blender.
  2. Blend on high until smooth and creamy, resembling a thick batter.
  3. Divide the fresh or frozen blueberries between 4 jars or containers.
  4. Pour the blended oat mixture over the blueberries and gently smooth the tops.
  5. If using, stir the melted chocolate and coconut oil together until combined, then pour over the top of each container.
  6. Seal and refrigerate for at least 90 minutes or overnight until chilled and set.
  7. Enjoy cold, straight from the fridge.

Notes

Allowing your oats to sit overnight gives them a creamier texture. For added variation, try experimenting with different fruits and toppings.
