  • 1 TBS garlic powder
  • 1 bay leaf
  • 1-2 TBS Cajun or Creole seasoning
  • 4 TBS unsalted butter
  • Fresh chopped parsley


Instructions

  1. Rinse the peas to remove any debris or stones.
  2. Soak the peas in boiling water for 30 minutes.
  3. In a pot, heat olive oil and sauté onion, bell pepper, and jalapeños for 5 minutes.
  4. Add minced garlic and sauté for an additional 30 seconds.
  5. Introduce smoked turkey wings and chicken stock, simmering the mixture.
  6. Cover and cook turkey wings for 30 minutes.
  7. Drain soaked peas and add to the pot.
  8. Stir in onion powder, garlic powder, and bay leaf, ensuring a low simmer.
  9. Cover and simmer, stirring occasionally for 45 minutes to an hour.
  10. Once peas are tender, stir in Cajun seasoning and butter, simmering until creamy.
  11. Garnish with parsley and serve over warm rice.
