Instructions
- Rinse the peas to remove any debris or stones.
- Soak the peas in boiling water for 30 minutes.
- In a pot, heat olive oil and sauté onion, bell pepper, and jalapeños for 5 minutes.
- Add minced garlic and sauté for an additional 30 seconds.
- Introduce smoked turkey wings and chicken stock, simmering the mixture.
- Cover and cook turkey wings for 30 minutes.
- Drain soaked peas and add to the pot.
- Stir in onion powder, garlic powder, and bay leaf, ensuring a low simmer.
- Cover and simmer, stirring occasionally for 45 minutes to an hour.
- Once peas are tender, stir in Cajun seasoning and butter, simmering until creamy.
- Garnish with parsley and serve over warm rice.
