Delightful muffins combining tart cranberries and zesty orange, topped with a crumbly streusel.
Ingredients
- 2 cups all-purpose flour
- ¾ cup granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsalted butter, melted
- 2 large eggs
- ½ cup milk
- 1 tablespoon orange zest
- 1 cup fresh or frozen cranberries
- ½ cup brown sugar (for streusel)
- ⅓ cup all-purpose flour (for streusel)
- ¼ cup cold unsalted butter, cubed (for streusel)
Instructions
- Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.
- In another bowl, combine the melted butter, eggs, milk, and orange zest. Add the wet ingredients to the dry ingredients and mix until just combined.
- Gently fold in the cranberries. Divide the batter evenly among the muffin cups.
- For the streusel, mix the brown sugar and flour in a small bowl. Cut in the cold butter until crumbly and sprinkle over the muffin batter.
- Bake for 20-22 minutes or until a toothpick inserted into the center comes out clean. Cool in the pan for 5 minutes, then transfer to a wire rack.
Notes
Do not overmix to avoid dense muffins. Use fresh cranberries for best flavor.
