A delightful blend of sweet and tart cranberries with rich nuts, perfect for breakfast or as a snack.
Ingredients
- 2 cups flour
- 1 cup sugar
- 1½ teaspoons baking powder
- 1 teaspoon salt
- ½ teaspoon baking soda
- ¾ cup orange juice
- 2 tablespoons butter or shortening
- 1 tablespoon orange zest
- 1 egg, beaten
- 1½ cups coarsely chopped fresh or dried cranberries
- ½ cup chopped nuts (pecans or walnuts)
Instructions
- Preheat the oven to 350°F (175°C). Grease or line a standard loaf pan.
- Cream the softened butter or shortening with sugar until light and fluffy.
- Add flour, baking powder, salt, and baking soda; mix until crumbly.
- Add orange zest, orange juice, and beaten egg; stir until smooth.
- Fold in cranberries and chopped nuts.
- Pour the batter into the prepared loaf pan and bake for about 55 minutes.
- Let cool in the pan for 15 minutes, then cool completely on a wire rack.
Notes
For a moister loaf, try adding an extra tablespoon of orange juice. Use fresh cranberries for best flavor and experiment with different nuts.
