Ingredients
- 2 lb bacon
- 1 (30-32oz) bag frozen tater tots
- 1 (1-oz) package ranch dressing mix
- 2 cups shredded cheddar cheese
- 8 large eggs
- 2 cups milk
Instructions
- Preheat your oven to 350ºF (175ºC) and lightly spray a 9×13-inch baking dish with cooking spray.
- In a large skillet, cook the bacon over medium heat until crispy, then chop into pieces.
- In a large bowl, toss together the tater tots, cooked bacon, and 1.5 cups of shredded cheddar cheese; pour this mixture into the prepared baking dish.
- In another bowl, whisk together the eggs, ranch dressing mix, and milk until well combined; pour this egg mixture over the tater tot mixture in the baking dish.
- Cover and refrigerate if baking later.
- Bake for 50-60 minutes, or until the eggs are set and the top is golden brown.
