Description
A delightful summer salad combining sweet corn, smoky bacon, and a creamy Ranch dressing, perfect for gatherings and picnics.
Ingredients
- 4 cups sweet corn
- 12 slices cooked bacon (finely chopped)
- 1/4 cup green onions (chopped)
- 1 jalapeño (finely diced)
- 1/2 cup Ranch salad dressing
- 1 cup cheddar cheese (shredded)
- Juice of 1 lime
- 1 teaspoon garlic powder
- Kosher salt (to taste)
- Freshly ground black pepper (to taste)
- 1 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/3 cup whole milk
- 1/4 cup buttermilk
- 1/4 teaspoon onion powder
- 2 cloves garlic (minced)
- 2 tablespoons lemon juice
- 1 teaspoon fresh dill
- Salt and pepper (to taste)
Instructions
- Combine mayonnaise, sour cream, whole milk, buttermilk, garlic powder, onion powder, minced garlic, lemon juice, and fresh dill in a mixing bowl and stir until smooth.
- Season with salt and pepper to taste.
- Set the dressing aside.
- Cook the bacon until crispy, then allow to cool and finely chop.
- Mix sweet corn, chopped bacon, green onions, jalapeño, and shredded cheddar cheese in a large bowl.
- Pour the Ranch dressing over the salad mixture and mix gently until coated.
- Squeeze fresh lime juice over the salad and stir in garlic powder.
- Taste the salad and adjust salt and pepper if necessary.
- Chill in the refrigerator for at least 60 minutes before serving.
Notes
Use fresh corn for the best flavor. You can customize the spice level and even make it vegan with appropriate substitutes.
