Description

A creamy and cheesy delight combining crab and shrimp with savory cheeses and spices, perfect for any gathering.

Ingredients

  • 1/2 lb cooked shrimp, finely chopped
  • 1/2 lb cooked crab meat, shredded
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup cream cheese, softened
  • 1/2 cup queso dip (mild or spicy)
  • 1 tbsp fresh cilantro, chopped
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • 8 small flour tortillas
  • 2 tbsp butter or oil (for frying)

Instructions

  1. In a large mixing bowl, combine the finely chopped shrimp and the shredded crab meat.
  2. Add the shredded Monterey Jack cheese, softened cream cheese, queso dip, chopped cilantro, garlic powder, and smoked paprika to the bowl. Mix thoroughly until all the ingredients are well combined.
  3. Take one tortilla at a time and place 2–3 tablespoons of the filling in the center. Roll the tortilla tightly and secure it with a toothpick.
  4. In a large skillet, heat the butter or oil over medium heat. Carefully place the rolled tortillas in the skillet and fry them until golden brown, about 2–3 minutes per side.
  5. Remove the toothpicks and plate the cooked quesadillas. Drizzle warm queso over the top and sprinkle with fresh cilantro.

Notes

Use fresh seafood for best flavor and high-quality cheeses for optimal texture. Adjust spice level based on queso dip choice.
