Ingredients

- 1 cup heavy cream
- 3 large egg yolks

Instructions
- Preheat your oven to 325°F (165°C) and grease the ramekins with butter.
- In a medium bowl, mix crab meat with the heavy cream, egg yolks, sugar, salt, white pepper, nutmeg, and lemon zest.
- Spoon the mixture into the ramekins, filling them three-quarters full.
- Place the ramekins on a baking sheet and bake for 20-25 minutes until set and the tops are golden.
- Let them cool for 5-10 minutes, then sprinkle a thin layer of sugar on top.
- Use a kitchen torch to caramelize the sugar until golden brown.
