Description

A hearty soup blending rich flavors of Italian sausage with comforting potatoes and fresh greens, perfect for chilly evenings.


Ingredients

  • 1 lb Italian sausage (mild or hot), casings removed
  • 1 tbsp olive oil (if needed)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups potatoes, peeled and cubed
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach or kale, chopped
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tsp crushed red pepper flakes (optional)
  • Salt and black pepper, to taste
  • Optional: grated Parmesan cheese for serving


Instructions

  1. In a large pot over medium heat, cook the Italian sausage until browned and fully cooked, breaking it into chunks. Remove excess grease if needed.
  2. Add the diced onion to the pot and cook until softened, about 3–4 minutes.
  3. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
  4. Add the peeled and cubed potatoes, chicken broth, dried oregano, dried basil, red pepper flakes, salt, and pepper.
  5. Bring the mixture to a boil, then reduce the heat and simmer for 15 to 20 minutes until the potatoes are fork-tender.
  6. Stir in the heavy cream and chopped spinach or kale. Simmer for another 5 minutes until the greens are wilted.
  7. Taste and adjust the seasoning as needed.
  8. Serve the soup hot, garnishing with grated Parmesan cheese if desired.

Notes

For a lighter version, consider using half-and-half or a milk alternative instead of heavy cream.
