A hearty soup blending rich flavors of Italian sausage with comforting potatoes and fresh greens, perfect for chilly evenings.
Ingredients
- 1 lb Italian sausage (mild or hot), casings removed
- 1 tbsp olive oil (if needed)
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups potatoes, peeled and cubed
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups fresh spinach or kale, chopped
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- 1/2 tsp crushed red pepper flakes (optional)
- Salt and black pepper, to taste
- Optional: grated Parmesan cheese for serving
Instructions
- In a large pot over medium heat, cook the Italian sausage until browned and fully cooked, breaking it into chunks. Remove excess grease if needed.
- Add the diced onion to the pot and cook until softened, about 3–4 minutes.
- Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
- Add the peeled and cubed potatoes, chicken broth, dried oregano, dried basil, red pepper flakes, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat and simmer for 15 to 20 minutes until the potatoes are fork-tender.
- Stir in the heavy cream and chopped spinach or kale. Simmer for another 5 minutes until the greens are wilted.
- Taste and adjust the seasoning as needed.
- Serve the soup hot, garnishing with grated Parmesan cheese if desired.
Notes
For a lighter version, consider using half-and-half or a milk alternative instead of heavy cream.
