Description

A warm and comforting soup made in the Crockpot, perfect for busy weeknights.


Ingredients

  • 1 lb protein of choice (chicken, beef, or sausage)
  • 4 cups vegetable or chicken broth
  • 2 cups mixed vegetables (carrots, potatoes, celery, etc.)
  • 1 can diced tomatoes
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tsp dried herbs (thyme, oregano, etc.)
  • Salt and pepper to taste
  • Optional: cream or cheese for serving


Instructions

  1. Place the protein at the bottom of the Crockpot.
  2. Add the diced onion and minced garlic.
  3. Pour in the broth and add the mixed vegetables and diced tomatoes.
  4. Season with dried herbs, salt, and pepper.
  5. Stir to combine.
  6. Cover and cook on low for 360-480 minutes or on high for 180-240 minutes until everything is cooked through.
  7. If desired, stir in cream or cheese before serving.
  8. Serve hot and enjoy!

Notes

For leftovers, store in airtight containers in the refrigerator for up to 3 days or freeze for up to 3 months.
