Description
A warm and comforting soup made in the Crockpot, perfect for busy weeknights.
Ingredients
- 1 lb protein of choice (chicken, beef, or sausage)
- 4 cups vegetable or chicken broth
- 2 cups mixed vegetables (carrots, potatoes, celery, etc.)
- 1 can diced tomatoes
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tsp dried herbs (thyme, oregano, etc.)
- Salt and pepper to taste
- Optional: cream or cheese for serving
Instructions
- Place the protein at the bottom of the Crockpot.
- Add the diced onion and minced garlic.
- Pour in the broth and add the mixed vegetables and diced tomatoes.
- Season with dried herbs, salt, and pepper.
- Stir to combine.
- Cover and cook on low for 360-480 minutes or on high for 180-240 minutes until everything is cooked through.
- If desired, stir in cream or cheese before serving.
- Serve hot and enjoy!
Notes
For leftovers, store in airtight containers in the refrigerator for up to 3 days or freeze for up to 3 months.
