Description

A hearty, flavorful Crockpot Chili made with beans, ground beef, and spices, perfect for any occasion.


Ingredients

  • 1 lb ground beef
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 15 oz kidney beans (drained)
  • 15 oz black beans (drained)
  • 28 oz crushed tomatoes
  • 14 oz diced tomatoes
  • 2 tbsp tomato paste
  • 2 cups beef broth
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 0.5 tsp black pepper
  • 1 tsp salt (adjust to taste)
  • 0.5 tsp oregano
  • 1 tbsp brown sugar (optional)
  • Shredded cheese (for topping)
  • Sour cream (for topping)
  • Green onions (sliced, for topping)


Instructions

  1. Brown the ground beef in a skillet over medium heat. Add the diced onions and minced garlic, cooking until the meat is no longer pink.
  2. Drain any excess fat from the skillet.
  3. Transfer the beef mixture to the slow cooker.
  4. Add the drained kidney beans, black beans, crushed tomatoes, diced tomatoes, tomato paste, and beef broth to the slow cooker.
  5. Sprinkle in the chili powder, cumin, smoked paprika, black pepper, salt, oregano, and optional brown sugar. Stir everything well to combine.
  6. Cover and cook on LOW for 6–8 hours or on HIGH for 3–4 hours.
  7. Serve warm with garnishes like shredded cheese, sour cream, and sliced green onions.

Notes

For a vegetarian version, omit the ground beef and add more beans and chopped vegetables. Consider incorporating smoky flavors with chipotle peppers.
