Description

A hearty and comforting soup perfect for feeding a crowd or a cozy meal at home. Simple ingredients combine into a filling and flavorful dish.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion (diced)
  • 3 stalks celery (diced)
  • 4 cloves garlic (minced)
  • 2 lbs ground beef
  • 1 lb Yukon gold potatoes (cut into 1-inch pieces)
  • 4 carrots (peeled and sliced)
  • 1 can green beans (drained)
  • 3 tablespoons tomato paste
  • 1 can diced tomatoes (with juices)
  • 1 can black-eyed peas (drained)
  • 1 can corn (drained)
  • 4-6 cups beef broth
  • Italian seasoning to taste
  • Smoked paprika to taste
  • Chili powder to taste
  • Salt to taste
  • Pepper to taste


Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat.
  2. Add diced onion and celery; sauté until soft.
  3. Stir in minced garlic for another minute.
  4. Add the ground beef, cooking until browned with no pink remaining.
  5. Mix in all remaining ingredients along with 4 cups of beef broth.
  6. Bring to a boil over high heat, then reduce to medium-low and simmer for about 14-16 minutes until potatoes are fork-tender.
  7. Adjust seasoning as needed before serving hot with your choice of toppings.

Notes

For extra flavor, consider browning the beef with some chopped bell peppers. This soup is flexible; use any beans or vegetables on hand. For a spicy kick, add red pepper flakes or hot sauce.
