Description

A bright, colorful salad made with fresh ingredients, perfect as a snack, appetizer, or side dish.


Ingredients

  • 1 can black beans, rinsed and drained
  • 1 can corn, rinsed and drained
  • 1 bell pepper, diced
  • 1/2 red onion, diced
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste


Instructions

  1. Prepare produce: dice the bell pepper, chop the red onion finely, halve the cherry tomatoes, dice the avocado last, and roughly chop the cilantro.
  2. Rinse and drain the canned black beans and corn thoroughly.
  3. Combine the black beans, corn, diced bell pepper, diced red onion, halved cherry tomatoes, diced avocado, and chopped cilantro in a large mixing bowl.
  4. Whisk together the lime juice, olive oil, cumin, and salt and pepper to taste in a small bowl.
  5. Pour the dressing over the salad and gently toss to combine without mashing the avocado.
  6. Serve cold, letting the salad rest for 10–20 minutes for best flavor before serving.

Notes

Serve with tortilla chips for dipping or as a topping for tacos. Great for potlucks and barbecues.
