Description

A light and fluffy low-carb, gluten-free alternative to regular bread, perfect for sandwiches or as a tasty snack.


Ingredients

  • 3 large eggs
  • 1/2 cup cottage cheese
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon salt


Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Separate the egg whites from the yolks in a mixing bowl.
  3. In another bowl, mix the egg yolks with the cottage cheese and salt until well combined.
  4. In a third bowl, beat the egg whites with cream of tartar until stiff peaks form.
  5. Gently fold the egg whites into the cottage cheese mixture, being careful not to deflate the egg whites.
  6. Spoon the mixture onto the prepared baking sheet, forming round mounds.
  7. Bake for 25-30 minutes or until lightly golden brown.
  8. Allow to cool slightly before serving.

Notes

To store leftovers, place in an airtight container in the refrigerator for up to three days, or freeze individually wrapped pieces.
