Description

A delicious twist on chicken parmesan featuring creamy cottage cheese, tender chicken, and savory marinara sauce.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup cottage cheese (low-fat or regular)
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with garlic powder, Italian seasoning, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat, add seasoned chicken breasts, and cook for about 5-7 minutes on each side until golden brown.
  4. Remove chicken from skillet, let it rest for a few minutes, and slice into bite-sized pieces.
  5. Combine cottage cheese and half of the mozzarella cheese in a bowl.
  6. In a baking dish, layer the sliced chicken, spread marinara sauce over it, add the cottage cheese mixture, and top with remaining mozzarella and Parmesan cheese.
  7. Bake in the preheated oven for 20-25 minutes or until the cheese is bubbly and golden.
  8. Let cool slightly before serving, garnished with fresh basil if desired.

Notes

Choose high-quality marinara sauce for best flavor. For extra creaminess, mix in a tablespoon of ricotta with the cottage cheese.
