Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup cottage cheese (low-fat or regular)
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil leaves for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with garlic powder, Italian seasoning, salt, and pepper.
- Heat olive oil in a skillet over medium heat, add seasoned chicken breasts, and cook for about 5-7 minutes on each side until golden brown.
- Remove chicken from skillet, let it rest for a few minutes, and slice into bite-sized pieces.
- Combine cottage cheese and half of the mozzarella cheese in a bowl.
- In a baking dish, layer the sliced chicken, spread marinara sauce over it, add the cottage cheese mixture, and top with remaining mozzarella and Parmesan cheese.
- Bake in the preheated oven for 20-25 minutes or until the cheese is bubbly and golden.
- Let cool slightly before serving, garnished with fresh basil if desired.
Notes
Choose high-quality marinara sauce for best flavor. For extra creaminess, mix in a tablespoon of ricotta with the cottage cheese.
