Ingredients
- 8 ounces pasta
- 1 cup cottage cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
- Chopped parsley for garnish (optional)
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- In a blender, combine the cooked pasta, cottage cheese, sautéed garlic, salt, and pepper. Blend until smooth and creamy. Adjust seasoning if necessary.
- Return the pasta mixture to the skillet and heat through over low heat.
- Serve warm, topped with Parmesan cheese and chopped parsley if desired.
