Ingredients
- 1 lb collard greens, chopped
- 1 can black-eyed peas, drained and rinsed
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 smoked ham hock (optional)
- 1 tsp red pepper flakes
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and cook until translucent, about 5 minutes.
- Stir in minced garlic and red pepper flakes, cooking for another minute.
- Toss in the chopped collard greens and cook until wilted, about 3-4 minutes.
- Pour in vegetable broth and add drained black-eyed peas, along with the smoked ham hock if using.
- Season with salt and pepper to taste, then bring to a simmer.
- Cover and cook on low heat for about 30-40 minutes, until collard greens are tender.
- Stir in apple cider vinegar just before serving.
Notes
Use fresh collard greens for better flavor and quality broth for enhanced taste.
