A rich and creamy coffee cheesecake with a chocolate cookie crust that will wow your guests.
Ingredients
- 24 cookies Chocolate Sandwich Cookies
- 1/2 cup Unsalted Butter (Melted)
- 24 oz Cream Cheese (Softened)
- 1 cup Granulated Sugar
- 1/4 cup Cornstarch
- 4 large Eggs (Room temperature)
- 1 cup Sour Cream
- 1 cup Heavy Cream
- 2 tbsp Instant Espresso Powder
- 1 tsp Vanilla Extract
- 1 cup Heavy Whipping Cream (For topping)
- Optional Garnishes: Chocolate shavings, cocoa powder dusting, or whole coffee beans
Instructions
- Preheat your oven to 325°F (160°C).
- In a large bowl, crush the chocolate sandwich cookies into fine crumbs and combine with melted butter. Press into the bottom of a springform pan.
- Beat the softened cream cheese until smooth, then gradually mix in the sugar until creamy.
- Add the cornstarch and beat until combined, followed by adding eggs one at a time, incorporating each fully before the next.
- Mix in sour cream, heavy cream, espresso powder, and vanilla extract until smooth.
- Pour the filling over the crust and bake for 60–65 minutes until the center is slightly jiggly. Turn off the oven, crack the door, and let cool for at least one hour.
- Chill in the refrigerator for at least four hours or overnight.
- Whip the heavy whipping cream until soft peaks form and add powdered sugar if desired.
- Spread whipped cream on top and garnish as desired before serving.
Notes
Use room temperature ingredients for best results. A water bath can be used for an even creamier texture.
