Description

A cozy one-pot meal combining coconut milk, tender chicken, and aromatic spices for a comforting dish.


Ingredients

  • 4 cups Chicken broth
  • 1 can Coconut milk
  • 3 cloves Garlic, minced
  • 1 inch Ginger, grated
  • 1 pound Boneless chicken thighs
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 cup Long-grain white rice
  • 2 stalks Green onions, for topping
  • 1 tablespoon Curry powder
  • 1/2 teaspoon Turmeric
  • 1/4 cup Fresh cilantro
  • 2 pieces Lime wedges, for serving


Instructions

  1. Heat a large pot over medium heat. Add oil, then sauté the minced garlic and grated ginger for about 1-2 minutes until fragrant.
  2. Add the boneless chicken thighs to the pot. Season with salt, black pepper, curry powder, and turmeric. Cook for 5-7 minutes until the chicken is lightly browned.
  3. Pour in the chicken broth and coconut milk, and bring the mixture to a boil.
  4. Once boiling, stir in the rice. Reduce the heat to low, cover the pot, and let it simmer for about 20 minutes or until the rice is cooked.
  5. Remove the pot from heat, and let it sit for an additional 5 minutes, covered.
  6. Fluff the rice with a fork, and serve hot, garnished with chopped green onions, fresh cilantro, and lime wedges.

Notes

Use low-sodium broth and full-fat coconut milk for best flavor. Adjust spices and add vegetables as desired.
