Ingredients
- 4 cups Chicken broth
- 1 can Coconut milk
- 3 cloves Garlic, minced
- 1 inch Ginger, grated
- 1 pound Boneless chicken thighs
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper
- 1 cup Long-grain white rice
- 2 stalks Green onions, for topping
- 1 tablespoon Curry powder
- 1/2 teaspoon Turmeric
- 1/4 cup Fresh cilantro
- 2 pieces Lime wedges, for serving
Instructions
- Heat a large pot over medium heat. Add oil, then sauté the minced garlic and grated ginger for about 1-2 minutes until fragrant.
- Add the boneless chicken thighs to the pot. Season with salt, black pepper, curry powder, and turmeric. Cook for 5-7 minutes until the chicken is lightly browned.
- Pour in the chicken broth and coconut milk, and bring the mixture to a boil.
- Once boiling, stir in the rice. Reduce the heat to low, cover the pot, and let it simmer for about 20 minutes or until the rice is cooked.
- Remove the pot from heat, and let it sit for an additional 5 minutes, covered.
- Fluff the rice with a fork, and serve hot, garnished with chopped green onions, fresh cilantro, and lime wedges.
Notes
Use low-sodium broth and full-fat coconut milk for best flavor. Adjust spices and add vegetables as desired.
