Ingredients

- 1 cup jasmine rice

Instructions
- In a pot, heat olive oil over medium heat. Add diced onion, garlic, and ginger, sautéing until fragrant.
- Season chicken breasts with salt and pepper, then add to the pot, cooking until browned.
- Pour in coconut milk and bring to a simmer.
- Add jasmine rice to the pot, stir well, cover, and cook on low heat until rice is tender and has absorbed the coconut milk (about 15-20 minutes).
- Fluff the rice with a fork and serve the chicken over the rice, garnished with fresh cilantro.
