Ingredients
- 1 pound shrimp, peeled and deveined
- 1 pound chicken breast, diced
- 1 pound andouille sausage, sliced
- 1 cup onion, chopped
- 1 cup green bell pepper, chopped
- 1 cup celery, chopped
- 3 cups Cajun-seasoned rice
- 1 can diced tomatoes (14.5 oz)
- 4 cups chicken broth
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- Green onions for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onions, green bell pepper, and celery, and sauté until softened.
- Add diced chicken and sausage, cooking until the chicken is browned.
- Stir in the diced tomatoes and Cajun seasoning.
- Add the shrimp and cook until they turn pink.
- Pour in the chicken broth and bring to a boil.
- Stir in the rice, reduce heat, cover, and simmer for about 20 minutes, until the rice is cooked.
- Season with salt and pepper to taste.
- Garnish with green onions before serving.
