Description

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 pound chicken breast, diced
  • 1 pound andouille sausage, sliced
  • 1 cup onion, chopped
  • 1 cup green bell pepper, chopped
  • 1 cup celery, chopped
  • 3 cups Cajun-seasoned rice
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups chicken broth
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Green onions for garnish


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onions, green bell pepper, and celery, and sauté until softened.
  3. Add diced chicken and sausage, cooking until the chicken is browned.
  4. Stir in the diced tomatoes and Cajun seasoning.
  5. Add the shrimp and cook until they turn pink.
  6. Pour in the chicken broth and bring to a boil.
  7. Stir in the rice, reduce heat, cover, and simmer for about 20 minutes, until the rice is cooked.
  8. Season with salt and pepper to taste.
  9. Garnish with green onions before serving.
