Ingredients
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter (plus more for cooking)
- 1 teaspoon vanilla extract (optional)
Instructions
- In a medium bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
- In another bowl, whisk the milk, egg, melted butter, and vanilla (if using) until smooth.
- Pour the wet mixture into the dry ingredients. Gently stir until just combined, being careful not to overmix.
- Heat a nonstick skillet or griddle over medium heat and lightly grease with butter. Pour about 1/4 cup of batter for each pancake onto the skillet.
- Cook until bubbles form on the surface and the edges appear set, about 2 minutes. Flip and cook for another 1–2 minutes until golden brown.
- Serve warm with a pat of butter, maple syrup, or your favorite toppings.
Notes
For fluffy pancakes, don’t overmix the batter and ensure the skillet is properly preheated.
