Description

Cinnamon Roll Pancakes combine the cozy flavors of cinnamon rolls and fluffy pancakes into one incredible dish, perfect for elevated breakfasts.


Ingredients

  • 1 1/4 cup milk (regular or plant-based)
  • 2 tbsp maple syrup
  • 3 tsp baking powder
  • 1 tsp vanilla extract
  • 1 cup regular or gluten-free all-purpose flour
  • 3 tsp cinnamon
  • 4 tbsp softened butter (regular or plant-based)
  • 1/2 cup brown sugar or coconut sugar
  • 1/2 cup powdered sugar
  • 2 tbsp melted butter (regular or plant-based)
  • 2 oz cream cheese (regular or plant-based)


Instructions

  1. In a mixing bowl, combine the milk and maple syrup. Then add the baking powder and vanilla extract.
  2. In another bowl, whisk together the flour and three teaspoons of cinnamon. Gradually add the dry mixture to the wet mixture until just combined.
  3. In a small bowl, mix the softened butter and brown sugar (or coconut sugar) until smooth. This will be your cinnamon roll filling.
  4. Preheat a non-stick skillet or griddle over medium heat. Pour a ladle of pancake batter onto the skillet and swirl a spoonful of the cinnamon filling on top.
  5. Cook for about 2-3 minutes, or until bubbles form on the surface. Flip and cook for another minute on the other side until golden brown.
  6. For the frosting, combine the powdered sugar, melted butter, and cream cheese in a bowl. Mix until smooth, adding a splash of milk if necessary to reach your desired consistency.
  7. Serve your pancakes warm with a drizzle of frosting on top.

Notes

Don’t overmix the batter for fluffier pancakes and ensure your skillet is at medium heat to avoid burning.
