Description
Cinnamon Roll Pancakes combine the cozy flavors of cinnamon rolls and fluffy pancakes into one incredible dish, perfect for elevated breakfasts.
Ingredients
- 1 1/4 cup milk (regular or plant-based)
- 2 tbsp maple syrup
- 3 tsp baking powder
- 1 tsp vanilla extract
- 1 cup regular or gluten-free all-purpose flour
- 3 tsp cinnamon
- 4 tbsp softened butter (regular or plant-based)
- 1/2 cup brown sugar or coconut sugar
- 1/2 cup powdered sugar
- 2 tbsp melted butter (regular or plant-based)
- 2 oz cream cheese (regular or plant-based)
Instructions
- In a mixing bowl, combine the milk and maple syrup. Then add the baking powder and vanilla extract.
- In another bowl, whisk together the flour and three teaspoons of cinnamon. Gradually add the dry mixture to the wet mixture until just combined.
- In a small bowl, mix the softened butter and brown sugar (or coconut sugar) until smooth. This will be your cinnamon roll filling.
- Preheat a non-stick skillet or griddle over medium heat. Pour a ladle of pancake batter onto the skillet and swirl a spoonful of the cinnamon filling on top.
- Cook for about 2-3 minutes, or until bubbles form on the surface. Flip and cook for another minute on the other side until golden brown.
- For the frosting, combine the powdered sugar, melted butter, and cream cheese in a bowl. Mix until smooth, adding a splash of milk if necessary to reach your desired consistency.
- Serve your pancakes warm with a drizzle of frosting on top.
Notes
Don’t overmix the batter for fluffier pancakes and ensure your skillet is at medium heat to avoid burning.
