Ingredients
- 1 cup cottage cheese
- 2 cups all-purpose flour
- 1/4 cup sugar
- 1/2 cup brown sugar
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 2 large eggs
- 1/4 cup milk
- 1/4 cup melted butter
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a mixing bowl, combine the cottage cheese, eggs, milk, melted butter, and vanilla. Mix well until everything is incorporated and creamy.
- In another bowl, mix together the all-purpose flour, sugar, brown sugar, baking powder, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Pour the batter into the prepared loaf pan and smooth the top using a spatula.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Let it cool in the pan before transferring to a wire rack for slicing.
