Description

Ingredients

  • 1 cup cottage cheese
  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1/2 cup brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/4 cup milk
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, combine the cottage cheese, eggs, milk, melted butter, and vanilla. Mix well until everything is incorporated and creamy.
  3. In another bowl, mix together the all-purpose flour, sugar, brown sugar, baking powder, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top using a spatula.
  6. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  7. Let it cool in the pan before transferring to a wire rack for slicing.
