Ingredients
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/2 tsp salt
- 4 large eggs
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 tsp vanilla extract
- 1 cup heavy cream
- 3 tbsp powdered sugar
- 1/2 tsp vanilla extract (for filling)
- Chocolate ganache (for decoration)
- Powdered sugar (for dusting)
- Berries or holly leaves (for garnish)
Instructions
- Preheat the oven to 350°F (175°C). Grease and line a 15×10-inch jelly roll pan with parchment paper.
- In a bowl, whisk together flour, sugar, cocoa powder, baking powder, and salt.
- In another bowl, beat eggs, milk, oil, and vanilla. Combine wet and dry ingredients until smooth.
- Pour batter into the prepared pan and spread evenly. Bake for 10-12 minutes until the cake springs back when touched.
- While hot, roll the cake in the parchment as you would a jelly roll and let it cool.
- For the filling, whip together heavy cream, powdered sugar, and vanilla until soft peaks form. Unroll the cooled cake, spread filling, then re-roll.
- Frost the rolled cake with chocolate ganache and decorate as desired. Dust with powdered sugar and garnish with berries or holly for a festive touch.
Notes
Store any leftover cake in the refrigerator, wrapped in plastic wrap for up to three days. For best results, avoid adding ganache until ready to serve.
