Description

A traditional festive dessert rich in flavors and nostalgia, customizable with your favorite dried fruits and spices.


Ingredients

  • 1 cup of dried fruits (raisins, currants, sultanas)
  • 1/2 cup of chopped mixed peel
  • 1 cup of breadcrumbs
  • 1/2 cup of brown sugar
  • 1/2 cup of flour
  • 1 tsp of baking powder
  • 1 tsp of mixed spice
  • 1/2 cup of milk
  • 2 eggs
  • 1/4 cup of brandy or rum
  • Butter for greasing


Instructions

  1. Preheat the steamer or a large pot with a tightly fitting lid.
  2. In a large mixing bowl, combine the dried fruits, mixed peel, breadcrumbs, flour, baking powder, and mixed spice.
  3. In another bowl, whisk together the milk, eggs, and brandy.
  4. Pour the wet ingredients into the dry ingredients and mix well until combined.
  5. Grease a pudding basin with butter and pour the mixture inside, smoothing the top.
  6. Cover the basin with parchment paper and then with foil, tying it securely around the rim.
  7. Place the basin in the steamer or pot with boiling water and steam for about 360 minutes, checking the water level periodically.
  8. Once cooked, let the pudding cool and store until ready to serve.
  9. To serve, reheat the pudding and serve with custard or cream.

Notes

For an extra festive touch, flambé the pudding with a little brandy just before serving. Store in the fridge for up to a month or freeze for up to a year.
