A traditional festive dessert rich in flavors and nostalgia, customizable with your favorite dried fruits and spices.
Ingredients
- 1 cup of dried fruits (raisins, currants, sultanas)
- 1/2 cup of chopped mixed peel
- 1 cup of breadcrumbs
- 1/2 cup of brown sugar
- 1/2 cup of flour
- 1 tsp of baking powder
- 1 tsp of mixed spice
- 1/2 cup of milk
- 2 eggs
- 1/4 cup of brandy or rum
- Butter for greasing
Instructions
- Preheat the steamer or a large pot with a tightly fitting lid.
- In a large mixing bowl, combine the dried fruits, mixed peel, breadcrumbs, flour, baking powder, and mixed spice.
- In another bowl, whisk together the milk, eggs, and brandy.
- Pour the wet ingredients into the dry ingredients and mix well until combined.
- Grease a pudding basin with butter and pour the mixture inside, smoothing the top.
- Cover the basin with parchment paper and then with foil, tying it securely around the rim.
- Place the basin in the steamer or pot with boiling water and steam for about 360 minutes, checking the water level periodically.
- Once cooked, let the pudding cool and store until ready to serve.
- To serve, reheat the pudding and serve with custard or cream.
Notes
For an extra festive touch, flambé the pudding with a little brandy just before serving. Store in the fridge for up to a month or freeze for up to a year.
